Majuelos Callejo is a red wine from Ribera del Duero produced by Bodegas Félix Callejo in Sotillo de la Ribera, a small population of just over 500 inhabitants located in the province of Burgos. Majuelos Callejo is a single variety of Tinta Fina. The grapes come from a single vineyard, located in the same town, planted at an altitude ranging from 850 to 930 meters above sea level. At this altitude, there are very marked temperature changes between day and night, which favours proper maturation and therefore balanced acidity. The soils vary from calcareous soils in the higher parts to the sandy and stony soils in the lower areas. The variety of soils provide different nuances to the wine. Harvesting is done by hand in small plastic boxes. Once in the winery, the grapes undergo a double selection where the best grapes and grains are then chosen for processing. The fermentation is carried out with indigenous yeasts from the vineyard itself, starting at a low temperature and finishing at 30 degrees. The grapes macerate with their skins for 15 days. The wine is aged in French oak for 18 months, applying slight movement to eliminate the residue. Majuelos Callejo is a very expressive wine marked by the diversity of soils and character of the Tinta Fina.
